Wheat starch is a protein that can be found in various plants and is a staple in the diet of many people. Wheat, corn, potatoes, and tapioca are popular sources of starch. It is a polysaccharide with a lot of glucose molecules in it. Starch has a wide range of applications in the food and processing industries, whether in its original form or as one of its variants.
 
Food starches are used to thicken and strengthen various items, including puddings, soups, sauces, pie fillings, salad dressings, and many baking recipes. Modified starches are often found in foods with a low pH, or those that cannot be cooked.

Wheat starches are widely found in two forms:

    • The original form of starch powder derived from plants is known as native starch. This is a dry, tasteless, odorless powder that is insoluble in cold water or alcohol in its purest form. It is mostly used to thicken and preserve custards, pies, sauces, and instant foods.
    • Native starch that has been mechanically, enzymatically, or chemically modified is known as modified starch. This is achieved to strengthen or weaken starch properties, specializing in the modified starch for thickening, gelling, encapsulating, and other uses.
